Desserts

Pasta Chicharrones This actually isn't a dessert, more of a snack. Super cheap, but takes some effort!

Ingredients:
short-cut pasta of your choice (I usually go for macaroni)
cooking oil
Optional seasoning
newspaper or paper towel

Method:
1. Cook the pasta as you would normally. Start with only a cup or two dry!
2. Drain and dry out the cooked pasta again, either via dehydrator or baking at 225F for a hour or two on a parchment paper-lined tray.
3. Heat a skillet or pot with an inch of cooking oil at 375F (or about 5-6 on the dial). Test the heat by using a single piece of pasta, it should immediately fizz if hot enough.
4. Fry the re-dehydrated pasta, putting only a few in the skillet at a time, count to 10 seconds, then scoop them onto a clean newspaper or paper towel. It'll be a bit messy!
5. After finishing the whole batch and letting them cool and dry, put in a container and dust lightly with seasoning of your choice. Can be sweet, spicy, or salty!
6. Resist urge to eat it all in one sitting.

Simple Fudge

Ingredients:
1 can of condensed milk (14oz)
14oz bag of chocolate chips (12oz will do too)
A bit of salt
Parchment paper
Optional: Additional ingredients such as:
Chopped walnuts/pecans, crushed peppermint candy, dried fruit, or a teaspoon of flavor extract of your choice.

Method:
1. Melt the chocolate chips in a bowl, but not to the point of liquid/boiling. A minute in the microwave will do.
2. Mix condensed milk (It’ll stick to the can, scrape it out), just a pinch of salt, and the optional ingredient into the chocolate, whip and fold til the milk disappears and it becomes thick.
3. Line a baking pan with parchment paper (keeps them from sticking to the pan) and pour the mixture in, spread evenly.
4. Put in fridge to let chill overnight til it solidifies. Cut into cubes and enjoy!

No-Bake Cheesecake

Ingredients:
1 can of condensed milk (14oz)
8oz brick of cream cheese OR neufchatel (2 bricks if you want it thicker)
Graham cracker crust
Optional: Additional ingredients or flavors such as:
1/4 cup Lime juice, oreo crumbs, fruit jam/preserves, couple spoons of cocoa powder, or a teaspoon of flavor extract of your choice.

Method:
1. Let the cream cheese soften to room temperature, or microwave for ~30 seconds (soften, not cook/melt!)
2. Whip/stir the softened cream cheese until it's easy to spread.
3. Mix in the condensed milk (remember to scrape it out), whip thoroughly til lumps mostly disappear.
4. Mix in the optional ingredients here!
5. Pour into graham cracker crust, then chill in fridge overnight. Take small slices and enjoy!
